A Gluten Free Lunchbox

 
Thought I would capture this lovely lunch that Damien made for Tom this morning.  It includes banana, apple, nectarine, carrots, celery, 2 hard boiled eggs with pepper and salt, rice crackers and two home made raspberry muffins.  What a great Dad!
 
Well I saved this blog post after writing above, as E had just grabbed said lunchbox off the dining room table and it had gone everywhere - breaking the crackers ..... aaahhhh real life!  Anyway I applied the 2 second rule, re-boxed the food and put it in T's bag!
 
In this lunchbox are the only sweet gluten free treat T likes.  We have tried everything - every packet mix plus every recipe made from scratch (with rice flour, tapioca, xanthum gum and other such ingredients).  But he has such a picky taste (doesn't like chocolate!).  Finally we found a hit with a muffin mix from Vive Health Food Store in Riding Road, Hawthorne.  They have an excellent selection of quality gluten-free products.
 

This "Well & Good" mix for muffins where you add your own filling.  T and all the kids and the adults in the house like these frozen berries from Aldi. 

As a mother who is also CFO in the household I highly recommend doing your core shopping at Aldi - I tend to top up with fruit & vegies at the local grocer, and then a minimal shop at Woollies/Safeway or Coles for items not availabe at Aldi - such as sushi making ingredients.  I estimate I save between $50 - $75 a week by shopping at Aldi.  It takes a bit to get used to as there is not nearly the choice of brands or items you may be used to.  However this is what makes one spend less - there is less 'impulse buying' and you don't pay for the big brand names and their marketing spend.
